The Instant Pot Recipes I Keep Coming Back To

January 11, 2026/2 Comments/in Food and Recipes, Home & Family /by Mary Hunt
Pin - The Instant Pot Recipes I Keep Coming Back To

I love my Instant Pot, but let’s be honest… not every recipe earns a repeat performance. Some sound great, make a mess, and quietly disappear forever. These? These stick. This roundup pulls together the Instant Pot recipes I actually make again. Easy breakfasts, comfort-food dinners, cozy soup, and even dessert. If your Instant Pot has been collecting dust lately, this might be the nudge it needs to get back to work.

instant pot sitting on a kitchen countertop

When I first unboxed my Instant Pot, I’ll admit… I felt a little like a culinary newbie, staring at buttons and options like they were hieroglyphics. My stovetop pressure cooker memories, grandma’s mysterious hissing and scary stories, didn’t exactly help my confidence. But here’s the thing: today’s Instant Pot is nothing like that old-school version. It’s smart, safe, and forgiving once you understand a few simple rules.

Start small: boil water, steam some eggs, try the sauté function. A few early missteps are normal. They teach you how your pot behaves and build confidence fast. Before long, you’ll be swapping sealing rings, layering flavors, and timing pressure releases like a pro.

Seasoned or new, the Instant Pot isn’t about perfection. It’s about making meals easier, faster, and tastier. Which brings me to the recipes I actually reach for again …

  • Mini Frittatas
  • Crustless Quiche
  • Cheesy Eggs with Bacon
  • Spaghetti with Meat Sauce
  • New York Cheesecake

Soy Sauce Chicken

This is one of those dinners that quietly solves a lot of problems. It uses a whole chicken, leans on pantry staples you probably already have, and doesn’t ask you to hover over the stove. The Instant Pot takes over, the house smells incredible, and dinner shows up tasting like you worked harder than you did.

The real bonus? The leftovers. This chicken somehow improves overnight, which means tomorrow’s lunch (or dinner) is already handled. When grocery prices are what they are, a recipe that feeds you more than once without getting boring earns real respect. This one does exactly that—simple, comforting, and dependable in the best possible way.

Tomato Soup

This is tomato soup for real life, the kind you make when you want something warm and comforting without opening a can or dirtying half the kitchen. It leans on pantry staples, comes together fast, and doesn’t demand your full attention while it cooks.

The Instant Pot handles the timing, the stovetop works just as well, and either way you end up with a smooth, cozy soup that tastes like you meant to do this all along. It’s forgiving, easy to tweak, and pairs with just about anything from a classic grilled cheese to whatever leftovers need using up. Simple, dependable, and worth keeping on repeat.

Mexican Breakfast Casserole

This is one of those recipes that pulls double duty and does it well. It works just as happily for a lazy weekend breakfast as it does for a quick, satisfying dinner when everyone’s hungry and patience is thin. The Instant Pot keeps things simple: brown the sausage, stir in the eggs and vegetables, set it, and walk away.

What comes out is hearty, flavorful, and flexible enough to handle whatever odds and ends you have on hand. The mix of sausage, beans, veggies, and melty cheese makes it filling without being fussy, and leftovers reheat like a dream. If you like meals that don’t require special timing or a lot of thinking this one earns its spot.

Mini Frittatas

These mini frittatas are my answer to mornings that move faster than I do. They’re simple, filling, and just structured enough to feel like a real breakfast without demanding much time or attention. Everything cooks right in the Instant Pot, so there’s no hovering over the stove or juggling multiple pans. You get protein from the eggs and turkey bacon, a little substance from the vegetables, and just enough cheese to make it satisfying.

They’re easy to customize, reheat well, and don’t fall apart if breakfast happens in the car. If you like starting the day with something warm and dependable without committing to a full cooking project, these earn a spot in your regular rotation.

Crustless Quiche

This is the kind of breakfast that feels a little indulgent but behaves like a practical adult. No crust to fuss with, no rolling pins before coffee, and no standing over the stove wondering if the center will ever set. You mix, pour, and let the Instant Pot handle the rest.

What you get is a rich, savory quiche packed with protein that holds together beautifully and reheats without turning rubbery. It’s naturally gluten-free, flexible enough to use whatever cooked meats you have on hand, and sturdy enough to carry you through a busy morning. Whether you slice it for breakfast, brunch, or a “breakfast-for-dinner” night, this one earns its keep.

Cheesy Eggs with Bacon

If mornings had a personality, this one would be “hungry, busy, and not interested in dirtying every pan in the kitchen.” That’s exactly why these Instant Pot Cheesy Eggs exist. This is a cozy, no-nonsense breakfast that delivers big comfort with minimal effort. Crispy bacon, fluffy eggs, melty cheese, and hearty hash browns all tucked into one dish.

You sauté, whisk, pour, and let the Instant Pot do the heavy lifting while you pour a second cup of coffee. It’s the kind of recipe that works just as well for a rushed weekday as it does for a lazy weekend brunch, and it reheats beautifully for leftovers. Simple ingredients, flexible add-ins, and a solid payoff. This one earns a permanent spot in the breakfast rotation.

Spaghetti with Meat Sauce

I’ll be honest… if you had told me years ago that I’d stop boiling pasta on the stovetop, I would’ve laughed and reached for my favorite pot. Spaghetti has rules, after all. Or so I thought. This one-pot Instant Pot Spaghetti with Meat Sauce quietly broke every one of them and won me over for good.

Everything cooks together, meat, sauce, and dry spaghetti, in one pot, soaking up flavor instead of sitting under it. No colander, no babysitting a bubbling pot, and no separate sauce pan cluttering up the sink. The result is tender noodles coated in rich, savory sauce that tastes like it simmered all afternoon. It’s budget-friendly, weeknight-easy, and just rebellious enough to feel fun. Once you try it, the old way starts to feel like unnecessary work.

One-Pot Instant Pot Spaghetti with Meat Sauce

This easy, no-fuss Instant Pot Spaghetti with Meat Sauce is the weeknight dinner hero you didn’t know you needed. Everything (yes, even the pasta) cooks together in one pot for a meal that’s saucy, savory, and downright comforting. Once you try it, you may never go back to boiling noodles again!

New York Cheesecake

I’ll never forget the look on my own face the first time I realized you could make a real New York–style cheesecake in an Instant Pot. Not a shortcut version. Not a compromise. The real deal… smooth, rich, creamy, and mercifully crack-free. If you’ve ever wrestled with water baths, oven temps, or that heartbreaking split down the center, this recipe is about to feel like a small kitchen miracle.

The Instant Pot creates the perfect gentle, steamy environment that cheesecake loves, so the texture turns out silky every single time, with a firm, buttery graham cracker crust to match. It’s simpler than baking, far more forgiving, and honestly a confidence booster if cheesecake has burned you before. This is the dessert that made me believe my pressure cooker could do just about anything and do it beautifully.

I use my IP to make the best yogurt (low fat, 2%, full fat-they all turn out perfectly), also to make black beans and navy beans from dry and to make brown rice. Even with that being said, I’m so happy to see some recipes that are tested and that are enjoyed. I did actually make the New York Cheesecake and it turned out beautifully.
