  1. Season the Chicken: Start by seasoning your shredded chicken with chili powder and cumin. Give it a good mix and set it aside. This step infuses the chicken with delicious flavors.
  2. Heat the Skillet: Heat up a non-stick skillet over medium heat and melt a teaspoon of butter in it. Place one tortilla in the skillet, making sure it gets coated with the melted butter.
  3. Add the Filling: On one half of the tortilla, sprinkle a generous amount of the seasoned chicken and top it with a handful of grated Monterey Jack cheese. Fold the tortilla in half, using tongs to press it down gently.
  4. Cook to Perfection: Cook until the bottom of the tortilla is golden brown and crispy, then flip it over carefully to brown the other side. You want the cheese to melt and become gooey.
  5. Why Stop With Just One? Once both sides are perfectly crispy and the cheese is fully melted, remove the quesadilla from the skillet. Repeat the process with the remaining tortillas and filling. Keep them warm in a low oven if needed.

Delicious Chicken Quesadillas in 7 Minutes

Ingredients

  • 1 tsp chili powder
  • 1 tsp cumin
  • 1½ cups dark rotisserie chicken, shredded
  • 4 tsp butter, divided
  • 4 large flour tortillas
  • 2 cups grated Monterey Jack cheese
  • 4 tbsp salsa
  • 4 tbsp sour cream

Instructions

  • Season the chicken with the chili and cumin powder, mix and set aside.
  • Add a teaspoon of butter to a non-stick skillet over medium heat. When the butter has melted, lay the tortilla flat in the melted butter. On one side of the tortilla, evenly disperse the chicken and cheese.
  • Using tongs, carefully fold the tortilla in half to cover the contents. 
  • Allow the quesadilla to cook until the underside of the tortilla is evenly browned. Carefully flip the quesadilla and brown on the remaining side making sure the cheese is melted.
  • Remove from heat and repeat the procedure for the remaining three quesadillas. (You can keep quesadillas warm in a 200 F oven.)
  • Slice the quesadilla into wedges and serve with salsa and sour cream.
