Ingredients

  • 2 (10-oz) bags White Vanilla Flavored Melting Wafers Ghiradelli brand OR substitute 2 (12-oz) bags white chocolate chips
  • 1 (14 oz.) can sweetened condensed milk like Eagle Brand, but NOT evaporated milk
  • 1/2 tspn peppermint extract
  • 1 1/2 cups crushed (any size) candy canes

Instructions

  • Line an 8 x 8-inch square baking pan with aluminum foil; grease the foil.
  • Combine the white chocolate and sweetened condensed milk in a saucepan set over medium heat.
  • Stir frequently until almost melted, remove from heat and continue to stir until smooth.
  • When chips are completely melted, stir in the peppermint extract and crushed candy canes.
  • Spread evenly in the bottom of the prepared pan. Chill for two hours, then cut into squares.
  • Good for up to two weeks when refrigerated.
  • Caution: Should you choose to sprinkle some of the crushed candy canes over the top to make it look pretty, serve this fudge within a few hours. Beyond that, the topped candy will become sticky and unpleasant to eat. However, provided the crushed candy canes are submerged into the chocolate, all is well.
