Ingredients
2 (10-oz)bagsWhite Vanilla Flavored Melting WafersGhiradelli brand OR substitute 2 (12-oz) bags white chocolate chips
1 (14 oz.)cansweetened condensed milklike Eagle Brand, but NOT evaporated milk
1/2tspnpeppermint extract
1 1/2cupscrushed (any size) candy canes
Instructions
Line an 8 x 8-inch square baking pan with aluminum foil; grease the foil.
Combine the white chocolate and sweetened condensed milk in a saucepan set over medium heat.
Stir frequently until almost melted, remove from heat and continue to stir until smooth.
When chips are completely melted, stir in the peppermint extract and crushed candy canes.
Spread evenly in the bottom of the prepared pan. Chill for two hours, then cut into squares.
Good for up to two weeks when refrigerated.
Caution: Should you choose to sprinkle some of the crushed candy canes over the top to make it look pretty, serve this fudge within a few hours. Beyond that, the topped candy will become sticky and unpleasant to eat. However, provided the crushed candy canes are submerged into the chocolate, all is well.
