Equipment

  • Slow cooker

Ingredients

  • 1 cup dry white wine such as Sauvignon Blanc or Pinot Grigio
  • 1 tablespoon lemon juice
  • 2 cups shredded Gruyère cheese
  • 2 cups shredded Swiss cheese or Emmental
  • 2 tablespoons cornstarch
  • 1 garlic clove halved
  • Pinch of nutmeg optional
  • Bread cubes veggies, apples, or other dippers

Instructions

  • Rub the inside of the slow cooker with the halved garlic clove. You can leave the garlic in for added flavor or discard it.
  • In a bowl, toss the shredded Gruyère and Swiss cheese with cornstarch to coat evenly. This will help thicken the fondue and prevent clumping.
  • Pour the white wine and lemon juice into the slow cooker and set to "Low." Heat for 10-15 minutes until warm.
  • Gradually add the cheese mixture to the slow cooker, a handful at a time, stirring constantly to ensure a smooth, even melt.
  • Once the cheese is melted and smooth, stir in a pinch of nutmeg for extra flavor, if desired.
  • Keep the slow cooker on "Low" to maintain the perfect serving temperature. Serve the fondue with an assortment of bread cubes, veggies, apple slices, or cooked sausages for dipping.

Notes

Preventing Clumps: Coating the shredded cheese with cornstarch before adding it to the slow cooker ensures a smooth fondue without clumps.
Wine Alternatives: If you'd prefer not to use wine, substitute with 1 cup of low-sodium vegetable or chicken broth and increase the lemon juice to 2 tablespoons for acidity.
Fondue Dipper Ideas: Get creative with dippers! Try cubed French bread, steamed vegetables, cooked meats, or even pretzels for extra variety.
Fondue Consistency: If the fondue is too thick, add a splash of warm wine or broth to thin it out. If it’s too thin, melt in additional cheese to reach the desired consistency.
