- 1 10-oz package frozen chopped broccoli, thawed
- 3 cups white and dark rotisserie chicken, chopped
- 1 can cream of mushroom soup
- 1 cup mayonnaise
- 1 tbs lemon juice
- 1 tsp curry powder, more or less to taste
- ½ tsp salt
- ½ tsp black pepper
- 2 cups grated sharp Cheddar cheese (can substitute Monterey Jack cheese)
- 2 tbsp butter
- 3/4 cup Panko breadcrumbs
- 6 cups cooked rice
Preheat oven to 350 F.
Drain broccoli and add to the bottom of a greased 9 x 13 casserole dish along with the chopped chicken.
Melt 2 tablespoons of butter in a sauté pan over medium heat. Add ¾ cup of Panko breadcrumbs and toast, stirring occasionally, for about 5 minutes or until golden brown and crispy.
Add soup, mayonnaise, lemon juice, curry powder, salt, and pepper into a mixing bowl and stir until combined.
Pour the mixture over the top of the broccoli and chicken and top with grated cheese and panko breadcrumb mixture.
Place the casserole in the oven and bake 30 to 35 minutes until browned and bubbly.
Serve over hot cooked rice.
