This Mexican Coffee is what happens when everyday coffee gets a cozy holiday upgrade. Brewed right in your coffee maker with cinnamon and brown sugar, it fills the house with the kind of smell that makes people wander into the kitchen on purpose. Sweet, gently spiced, and wonderfully simple.

Ingredients

  • 2/3 cup ground coffee
  • 3 cinnamon sticks 3 inches long
  • 1/4 cup firmly packed brown sugar
  • 6 cups cold water
  • Milk and additional sugar optional for serving

Instructions

  • Place the ground coffee into a filter and set it in the brew basket of your coffee maker.
  • Add the cinnamon sticks and brown sugar directly to the empty carafe.
  • Pour the cold water into the coffee maker and start the brew cycle.
  • When brewing is complete, stir well to dissolve the sugar and distribute the cinnamon flavor.
  • Pour into cups, keeping the cinnamon sticks in the pot. Serve with milk and extra sugar, if desired.

Notes

For a richer flavor, use dark roast coffee.
Turn this into an adult version by adding a splash of coffee liqueur or dark rum to each mug.
Leftovers reheat well on the stovetop or in the microwave.
Hosting tip: Brew a double batch and keep it warm in a thermal carafe to avoid bitter over-cooking.
