Ingredients

  • 1 pound cooked chicken, shredded
  • 1 15-oz can whole peeled tomatoes, mashed
  • 1 10-oz can enchilada sauce
  • 1 medium onion, chopped
  • 1 4-oz can chopped green chiles
  • 2 cloves garlic, minced
  • 2 cups water
  • 1 14.5 oz chicken broth
  • 1 tspn cumin
  • 1 tspn chili powder
  • 1 tspn salt
  • 1/4 tspn ground black pepper
  • 1 bay leaf
  • 1 10-oz pkg frozen corn
  • tortilla chips, optional garnish
  • sour cream, optional garnish
  • grated cheese, optional garnish

Instructions

  • Place all ingredients into the slow cooker in a 6-qt slow cooker. Stir. Cover.
  • Cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
  • Optional: Garnish with tortilla chips, sour cream and grated cheese. Amazing.
