- 1 pound cooked chicken, shredded
- 1 15-oz can whole peeled tomatoes, mashed
- 1 10-oz can enchilada sauce
- 1 medium onion, chopped
- 1 4-oz can chopped green chiles
- 2 cloves garlic, minced
- 2 cups water
- 1 14.5 oz chicken broth
- 1 tspn cumin
- 1 tspn chili powder
- 1 tspn salt
- 1/4 tspn ground black pepper
- 1 bay leaf
- 1 10-oz pkg frozen corn
- tortilla chips, optional garnish
- sour cream, optional garnish
- grated cheese, optional garnish
Place all ingredients into the slow cooker in a 6-qt slow cooker. Stir. Cover.
Cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
Optional: Garnish with tortilla chips, sour cream and grated cheese. Amazing.
