Ingredients

  • 6 slices bacon cut into ½-inch pieces
  • 1 onion finely chopped
  • cups chicken broth homemade or 2 cans condensed
  • 2 cups water
  • 5 large russet potatoes diced
  • ½ tsp salt
  • ½ tsp ground white or black pepper
  • ½ cup all-purpose flour
  • 2 cups half-and-half
  • 12 oz evaporated milk

Instructions

  • In a large skillet, cook bacon and onion over medium-high heat until the bacon is browned and onions are soft. Drain any excess bacon fat.
  • Transfer the bacon and onion mixture to the slow cooker. Add chicken broth, water, diced potatoes, salt, and pepper.
  • Cover and cook on Low for 6 to 7 hours, stirring occasionally, until potatoes are tender.
  • In a small bowl, whisk the flour with half-and-half until smooth. Stir this mixture into the soup, along with evaporated milk. Cover and cook for another 30 minutes to thicken before serving.
