Our friends at eMeals sent me the perfect menu for one last summer supper. Soon enough we’ll be fixing heartier fare and cranking up the thermostat. But until then, let’s squeeze out one last summer meal.

Black Bean, Avocado and Brown Rice Burritos
 
Ingredients
Burritos:
  • 1 cup brown rice, cooked
  • whole wheat tortillas
  • 1 can black beans, drained, rinsed and heated
  • 2 avocados, chopped
  • 2 tablespoons shredded cheese, Mexican blend
  • cilantro, to taste
Salsa:
  • 2 tomatoes, chopped
  • ½ cup chopped yellow onion
  • 1 clove garlic, chopped
  • juice of 1 fresh lime
  • 3 tablespoons olive oil
  • salt to taste
Instructions
Burritos:
  1. Cook brown rice according to package directions.
  2. Spread a thin layer of brown rice down the center of a tortilla.
  3. Top with black beans, avocado, cheese and cilantro.
  4. Fold in sides of tortilla and then roll to make burrito.
  5. Repeat with remaining tortillas.
Salsa:
  1. To make the salsa, combine tomatoes, onion and garlic in a small bowl.
  2. Add cilantro, lime juice, olive oil and salt.
  3. Garnish the top of each burrito with desired amount of salsa.
Mixed Berry Salad
 
Ingredients
  • 1 cup sliced strawberries
  • 1 cup blackberries
  • ¼ cup chopped mint
  • olive oil
  • salt
Instructions
  1. Combine strawberries and blackberries in a medium bowl.
  2. Add mint, olive oil and salt.
  3. Toss gently and serve.

    I love Emeals! We subscribe to the low carb family plan (just 2 of us) and take the leftovers for lunch the next day. I have given several subscriptions as gifts. They even have lunch plans for kids and special event/holiday menus. Can’t say enough good things about them!

    I have made my own egg rolls all summer and they have been so good. They are something very different, fairly healthy b/c I saute or bake them, dont have cheese in them and I halve the amount of pork so there is only 1/2 pound of pork in 14 egg rolls. I use the sweet chili sauce on them and eat them for breakfast, as well. Delicious and very easy to make. Plus making one batch gives you 14 egg rolls!

    Truly, I am unable to try the eMeals but I would like to. My husband will not eat anything in marinades, soy sauce, w/mushrooms, no salmon and not much of any other fish, no to asparagus and “no” to a lot of other things. He wants something plain, as in steak and/or chicken with potato and canned green beans. Is there any hope for me with eMeals?
